TWO-TONE BAGNACAUDA COCCIO

A candle table cooker ideal for bagnacauda in one piece.
The terracotta is ideal for slow cooking (electric oven, microwave, flame). Characteristic of terracotta is to enhance the exchange of flavors, to exalt the aromas and to give the food a special taste. This material distributes the heat uniformly and gradually over the entire surface, then doesn't alter the nutritional values of food, avoids the tansformation of fatty acids in fats and glycerin (substances harmful to the body) and keeps the foods warm longer. The presence of cracks in the coating, caused by the porosity of the material, not be considered defects, but characteristics and necessary conditions for the fire resistance and the temperature changes. It is advisable, before first use, to put the dish in boiling water and vinegar: this allows to reduce the seepage characteristic of the liquid, caused by the porosity of the material. To eliminate any traces of flavors relating to previous cooking, it's very important to wash the dishes with hot water and cleaning agents, even better in the dishwasher and allow to dry completely before storing the cookware, so as to prevent the release of bad odors.
