Terracotta is ideal for slow cooking (electric oven, microwave, flame), it harmonises the exchange of flavors, enhances the aromas and gives the food a special taste. By distributing heat evenly and gradually over the entire surface, it does not alter the nutritional principles of food, prevents the transformation of fats into fatty acids and glycerin (substances harmful to the body) and keeps food warm longer. The presence of cracks in the coating, due to the porosity of the material, are not defects, but peculiar characteristics and a necessary condition for resistance to fire and temperature changes. Before the first use, boil the dish with water and vinegar: this little trick will reduce the characteristic oozing of the liquid contained, due to the porosity of the material. To eliminate any previous cooking flavors, it is essential to wash the dishes thoroughly with hot water and normal detergents, preferably in the dishwasher, and allow the dishes to dry completely before putting them away. This will prevent the release of bad smells.
